Bukharian Sabich Challah (Challah Stuffed with Eggplant, Egg, and Tahini)
A fusion of the iconic Israeli Sabich sandwich with Bukharian challah craftsmanship.
Ingredients:
- 1 large challah dough (homemade or store-bought)
- 1 medium eggplant, sliced
- 2 hard-boiled eggs, sliced
- 1/4 cup tahini
- 1 tbsp amba (optional)
- 1 tbsp olive oil
- Salt and pepper
- 1 tsp cumin
- 1/2 tsp paprika
- Sesame seeds for topping
- 1 egg for egg wash
Instructions:
- Roast eggplant slices with olive oil, cumin, paprika, salt, and pepper at 400°F for 20 minutes.
- Roll out challah dough and layer eggplant, eggs, tahini, and amba.
- Roll, braid, and brush with egg wash. Top with sesame seeds.
- Bake at 350°F for 30–35 minutes.
Bukharian-Israeli Carrot Salad
A bright, tangy side dish inspired by both cultures.
Ingredients:
- 4 large carrots, grated
- 1/2 cup raisins
- 1/4 cup toasted pumpkin seeds
- 2 tbsp fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp cumin
- Salt and pepper
Instructions:
- Combine carrots, raisins, pumpkin seeds, and parsley.
- Mix lemon juice, olive oil, honey, cumin, salt, and pepper.
- Toss with the salad and chill before serving.
Cholent Shakshuka (Slow-Cooked Tomato and Bean Stew)

Ingredients:
- 1 lb beef stew meat
- 1 cup dry chickpeas, soaked
- 1 cup white beans, soaked
- 2 onions, diced
- 4 cloves garlic, minced
- 2 red bell peppers, chopped
- 1 can crushed tomatoes
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp turmeric
- Salt and pepper
- 4 eggs
- Olive oil
Instructions:
- Sauté onions, garlic, and peppers. Add meat and brown.
- Add spices, tomatoes, chickpeas, and beans. Cover with water.
- Simmer for 4–5 hours.
- Crack eggs on top, cover, and cook for 10 minutes.

Ingredients:
- 2 cups cooked Oshi Bukhari
- 6 fresh Israeli pitas
- 1/2 cup hummus
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup pickles, sliced
- Harissa or hot sauce (optional)
Instructions:
- Warm pilaf and stuff into pitas spread with hummus.
- Add lettuce, tomatoes, pickles, and a drizzle of harissa.
