Ingredients:

  • 1/2 lb beef cubes (or lamb)
  • 1 onion, diced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tomato, chopped
  • 1/2 cup rice
  • 6 cups water or stock
  • Salt, pepper, pinch of cumin

Instructions:

Sauté onion, carrot, and beef until lightly browned.

Add tomato, potato, rice, and stock.

Simmer until rice and beef are tender (about 40 min).

Ingredients:

  • 1 cup dried apricots
  • 1/2 cup raisins
  • 1/2 cup dried prunes
  • 6 cups water
  • 2 tbsp sugar (optional)
  • 1 cinnamon stick

Instructions:

Simmer dried fruits with water, sugar, and cinnamon for 30 minutes.

Cool to room temperature and serve chilled or warm.

 

 

Samsa-e Tovus (Bukharian Chicken & Onion Hand Pies)

Ingredients:

  • 2 cups flour
  • 1/2 cup oil or margarine
  • 1/2 cup water
  • Pinch salt

Filling:

  • 1 lb ground chicken
  • 2 onions, finely diced
  • 1 tsp cumin
  • Salt and pepper

Instructions:

Mix dough and let rest.

Combine chicken, onion, and spices for filling.

Roll dough thin, cut squares, fill with chicken mixture, fold into triangles.

Add sugar and cardamom, stir well.
